Makes 1 (8-inch) cake or 12 muffins
Heat oven to 275 degrees. Spray one 8-inch round cake pan or one 12-cup muffin pan with cooking spray. In a mixing bowl, combine 1 bag KNOW Better Muffin and Cake Mix with 2 cups water. Stir until no lumps remain. Pour the mix into the prepared pan and bake until a toothpick inserted into the center comes out clean, 40 to 50 minutes for the cake pan or 35 to 45 minutes for the muffin pan. Let cool in the pan for at least 10 minutes before serving. (Makes 1 8-inch cake or 12 muffins.)
