We've long been using allulose in our products here at KNOW Foods, but we know that the sweetener is a new thing for many of you. This is why we'll be sharing all kinds of stories and recipes to help you bring allulose into your kitchen with ease.
First up: All of your allulose questions, answered.
A great-tasting, natural, non-GMO simple sugar, allulose is found in common foods like maple syrup, figs, and raisins. Allulose is what is known as a “rare sugar,” as it only exists in foods in small quantities, and has all of the taste and texture of typical granulated sugar.
While allulose is absorbed by the body, it is not metabolized as a source of energy. This means that it has no impact on blood sugar or insulin and it has only 10 percent of the caloric impact as table sugar.
Well, we're not scientists ourselves, but researchers at the Food and Drug Administration agree with us. As of April 2019, the FDA has released new guidelines that allow all food manufacturers, like KNOW Foods, to exclude allulose from total and added sugar counts on food labels.
Says Susan Mayne, Ph.D., director of FDA’s Center for Food Safety and Applied Nutrition: “The latest data suggests that allulose is different from other sugars in that it is not metabolized by the human body in the same way as table sugar. It has fewer calories, produces only negligible increases in blood glucose or insulin levels, and does not promote dental decay.”

We're not out here to knock other sweeteners, but we do really love that allulose works as a 1:1 sugar replacement and that it doesn't have a metallic or cooling aftertaste. It looks like sugar, tastes like sugar, and, when you’re cooking or baking, behaves like sugar.
Because it doesn't impact blood sugar or insulin, allulose is a great sweetener for those who are diabetic. It also fits in neatly with the Keto lifestyle. However, allulose can complement any other diet or lifestyle, and because it makes such a neat substitute for sugar, is appropriate for anyone who is looking to eat healthfully.
