Greek Pasta Salad


This recipe is perfect for summer potlucks or casual get togethers at home. Try it out!

Ingredients:

 

  • 1 1/2 cups English cucumber
  • 1 garlic clove
  • 1 red pepper
  • 2 tbsp Italian flat-leaf parsley
  • 1 1/2 tbsp Oregano, fresh
  • 2/3 cup red onion, sliced
  • 1 cup Kalamata olives, pitted and halved
  • 3 tbsp lemon juice, fresh squeezed
  • 1 package of KNOW Better pasta
  • 10 slices of salami, quartered
  • 1/4 tsp black pepper, ground
  • 1/2 tsp Kosher salt
  • 2/3 cup Olive oil, extra virgin
  • 3 tbsp Red wine vinegar
  • 1 cup Feta cheese
  • 1 cup cooked broccoli
  • 1/2 cup tofu, cubed into 1/2 inch squares
Instructions:
      Combine cooked pasta with ingredients in a large bowl. Chill for at least an hour before serving. Enjoy!
