This KNOW community recipe is a favorite of Darlene Carson. For the shiniest chocolate coating, use the edible paraffin wax as directed in the recipe. If you prefer not to use it, simply omit and coat the peanut butter balls with the melted chocolate. The resulting candies will not be as shiny, but they'll still taste great. You can also use any flavor of KNOW Better Cookie that you'd like here; we think Chocolate Chip would work especially well.
Makes about 4 dozen
8 to 10 ounces natural creamy peanut butter
8 tablespoons (1 stick) unsalted butter
1 1/2 cups KNOW Better Sweetener
4 KNOW Better Peanut Butter Cookies
2 cups KNOW Better Chocolate Chips, plus more for decorating
1 ounce edible paraffin wax (optional)
Additional decorations, such as chopped nuts and unsweetened coconut flakes
Line a baking sheet with aluminum foil.
Using an electric mixer, beat the peanut butter and the butter until smooth. Add the sweetener and continue to beat until lightened in color.
In a food processor, pulse the cookies until they form fine crumbs. Add to the peanut butter mixture and stir until well combined. Roll the mixture into small balls and refrigerate on the prepared baking sheet while you prepare the chocolate coating.
In a double boiler, melt the chocolate chips and the wax, if using.
Use two spoons to drop the peanut butter balls in the chocolate coating and return to the baking sheet. Top with additional chocolate chips or other toppings, if desired. Return to the refrigerator until chilled. Transfer to an airtight container and store in the refrigerator.
