Pecan Pie Waffles with Spiced Syrup

Fall is finally here, and with it comes all the best cool-weather desserts, like pumpkin, apple, and pecan pie. We're celebrating by transforming these pies into homemade waffles made using KNOW Better Pancake Mix. Why? Because waffles are wonderful, of course. First up is pecan pie, which means a serious handful of toasted nuts, rich, maple-y flavor and a homemade spiced syrup to drizzle all over the top.

Makes about 6 waffles


Spiced Syrup
1/2 cup KNOW Better Sweetener
1/4 cup water
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/8 teaspoon ground allspice
1/8 teaspoon ground clove
Pinch sea salt

2 cups KNOW Better Pancake Mix
2 tablespoons KNOW Better Sweetener
1 cup water
1 large egg
2 tablespoons KNOW Better Syrup
1/2 cup toasted chopped pecans


To make the syrup: In a small saucepan, combine all of the syrup ingredients. Place over medium heat and bring to a boil, stirring to dissolve the sweetener. Immediately remove from the heat and let cool to room temperature. Store in an airtight container until ready to serve.

To make the waffles: Set a waffle iron on a rimmed baking sheet to catch drips. Turn it on to its lowest setting and let heat while you prepare the batter.

In a large bowl, whisk together the mix and the sweetener. In a small bowl, whisk together the water, egg, and syrup. Stir into the dry mixture until smooth. Stir in the pecans. Let sit for 3 to 5 minutes to thicken.

Spray the inside of the waffle iron with nonstick coconut oil spray, then ladle on the waffle batter. Spread the batter to the edges of the waffle iron. Cover and cook on the lowest setting until the waffle iron light turns green, 3 to 5 minutes. Transfer the waffle to a plate and keep warm while cooking the rest of the batter. Serve with topped with the spiced syrup.
