When you're following a grain-free lifestyle, shepherd's pie can be a great, hearty main dish. However, if you're also trying to eat low carb, you run into a problem — the traditional mashed potato topping will quickly through your macros off. The solution? 3 tablespoons extra-virgin olive oil
1 onion, diced
1 tablespoon minced garlic
1 pound ground beef
Salt and freshly ground black pepper
2 cups crushed tomatoes
2 tablespoons chopped fresh parsley
2 cups KNOW Better Bread Mix
2/3 cup water or chicken broth
Heat oven to 325 degrees.
In a large saucepan, heat the olive oil over medium heat. Add the onion and garlic and cook, stirring frequently, until softened and translucent, 7 to 10 minutes. Add the ground beef and season with salt and pepper. Continue to cook, stirring to break up any large pieces of meat, until the beef is no longer pink, 5 to 7 minutes.
Add the tomatoes and bring to a simmer. Remove from the heat, stir in the parsley and season to taste with salt and pepper. Transfer to a 9-inch pie plate or another similarly sized baking dish.
In a medium bowl, stir together the bread mix and water until no lumps remain. Spread over the top of the meat mixture in the pie plate and smooth the top.
Transfer to the oven and bake until the top is well browned and cooked through, 20 to 25 minutes. Let cool for 5 minutes, then serve.
