This super easy coleslaw recipe makes great use of KNOW Better Sweetener for a sweet, tangy, and creamy dressing. Go ahead and use a bag of pre-chopped coleslaw mix for ease; it'll work great here if you're not up for chopping up a mess of cabbage. Serve the coleslaw as a barbecue side dish or on top of a homemade shrimp burger.
Serves: 4 to 6
3/4 cup sugar-free, soy-free mayonnaise, such as Primal Kitchen
3 tablespoons KNOW Better Sweetener
2 tablespoons fresh lemon juice
1 1/2 tablespoons distilled white vinegar
1 teaspoon sea salt
1 teaspoon freshly ground black pepper
1 (16-ounce) bag coleslaw mix
In a large bowl, whisk together the mayonnaise, sweetener, lemon juice, vinegar, salt, and pepper. Add the coleslaw mix and stir well to combine. Cover and refrigerate until the flavors have been absorbed by the cabbage and the coleslaw is cold, at least 2 to 3 hours. Serve.
