Homemade KNOW Better Buns

Homemade Grain Free Hamburger Buns

Do you miss KNOW Better Buns? Us too — that's why we decided to make our own using KNOW Better Muffin and Cake Mix. The recipe below incorporates whipped egg whites to add a bit more rise and airiness to the final buns. If you'd rather not go through the trouble, you can simply add in lightly beaten whole eggs with the water. You will, however, need a miniature cake or hamburger bun pan, such as this one, in order to bake the buns.

Makes 6 large hamburger buns


1 bag KNOW Better Classic Muffin and Cake Mix
2 tablespoons KNOW Better Sweetener
1/4 teaspoon kosher or sea salt
1 1/4 cups water
2 large eggs, separated
1/4 cup melted coconut oil 


Heat oven to 325 degrees. Grease a 6-cup miniature cake or hamburger bun pan with coconut oil spray and line the bottoms of the cups with parchment paper.

In a large bowl, whisk together the mix, sweetener, and salt. In a small bowl, whisk together the water and egg yolks. Add the water mixture to the dry mix and stir well to combine. Add the coconut oil and stir well to combine.

In a second large bowl, beat the egg whites until stiff peaks form. Add about a quarter of the egg whites to the batter and stir gently to combine. Add the remaining egg whites and fold in until just incorporated. 

Divide the batter between the cups in the prepared pan. Transfer to the oven and bake until the buns are golden brown and a toothpick inserted in the center comes out clean, about 30 minutes. Let cool in the pan for 10 to 15 minutes, then transfer to a wire rack to cool completely. Remove the parchment paper from the bottom before serving.
