Think you can only have bolognese on a weekend? Think again. This quick, grain-free pasta bolognese makes great use of both KNOW Better Pasta and KNOW Better Ketchup—yes, ketchup—for a deliciously rich, beefy pasta sauce that may even fool your grandmother.
Serves 4 to 6
3 tablespoons extra-virgin olive oil
1 pound ground beef, preferably organic and grass-fed
1 cup finely diced yellow onion
1 tablespoon minced fresh garlic
2 1/2 cups chopped fresh tomatoes
1 (15-ounce) can tomato sauce
2/3 cup KNOW Better Ketchup
Salt and freshly ground black pepper
3 cups KNOW Better Elbow Pasta
1/2 cup thinly sliced fresh basil
3 tablespoons chopped fresh parsley
Freshly grated Parmesan cheese, for serving (optional)
In a large pot or Dutch oven, heat the olive oil over medium-high heat. When the oil is shimmering, add the beef and cook, breaking up the meat with a wooden spoon, until no longer pink. Add the onion and garlic and continue to cook, stirring, until translucent, 5 to 7 minutes. Stir in the fresh tomatoes and continue to cook until the tomatoes break down a bit, 5 to 7 minutes.
Stir in the tomato sauce and ketchup and bring to a simmer. Reduce the heat to low and continue to simmer until the flavors have melded, 5 to 10 minutes. Remove from the heat and season to taste with salt and pepper.
Meanwhile, bring a large pot of salted water to a boil. Add the pasta and cook just until tender, 3 to 4 minutes. Drain immediately.
Add the cooked pasta to the sauce, along with the basil and parsley. Stir well to combine, then serve topped with Parmesan, if desired.
