All of the moist, tender texture of traditional banana bread, but with none of the grains? Sign us up, especially when a recipe is as easy as the one below. Simply combine KNOW Better Bread Mix with mashed bananas, coconut oil, KNOW Better Sweetener, a few spices, and almond milk, and you're pretty much already done. All that's left is waiting for the bread to bake.
1 (1-pound) bag KNOW Better Bread Mix
1/8 teaspoon ground nutmeg
Pinch kosher or sea salt
3 ripe bananas
1/4 cup melted coconut oil
1/4 cup KNOW Better Sweetener
1 teaspoon vanilla extract
1 1/2 cups almond milk or water
Heat the oven to 350 degrees. Generously grease a loaf pan with coconut oil spray. Line the bottom and long sides of the pan with parchment paper.
In a medium bowl, whisk together the bread mix, nutmeg, and salt.
In a large bowl, use a fork to mash the bananas until mostly smooth. Whisk in the coconut oil, sweetener, and vanilla until smooth. Whisk in the almond milk until smooth. Add the dry mixture and whisk until no dry mix remains. Let sit until thickened, about 10 minutes.
Transfer to the prepared loaf pan and smooth the top. Bake until golden brown and a toothpick inserted in the center comes out clean, 50 minutes to 1 hour.
Let cool completely in the pan before serving.
