Next time you want a cookie and don't want to go to the trouble of actually turning on your oven, try whipping up a batch of these cookie dough fat bombs. Because they're made with KNOW Better Sweetener and Chocolate Chips, you they've only got 1 net carb per serving, and they still taste great. (Want an actual cookie? This dough does actually bake into cookies, too. Just flatten a fat bomb or two on a parchment-lined baking sheet and bake for 10 to 12 minutes at 300 degrees.)
Serves: About 12
8 tablespoons (1 stick) unsalted butter, at room temperature
1/2 cup KNOW Better Sweetener
1/2 teaspoon vanilla
1/2 teaspoon kosher salt
2 cups finely ground almond flour
1/2 cup KNOW Better Chocolate Chips
With an electric mixer on medium-high speed, cream the butter, sweetener, vanilla and salt until light and fluffy. You will have to scape down the sides of the bowl a few times. On low speed, mix in the almond flour a little at a time until fully incorporated. Lastly, mix in the chocolate chips on low.
Serve immediately or (preferably) transfer to an airtight container and refrigerate overnight. Using a tablespoon, scoop the chilled dough into walnut sized balls. Use your hands to roll until smooth. Bring to room temperature before serving.
