KNOW Better Cauliflower Pizza

Regular cauliflower crust is fine, but KNOW Better cauliflower crust, made with a blend of mashed florets and Better Bread Mix, is even better. The mix helps the cauliflower form a crisp thin crust that slices like a dream. Add a simple tomato sauce and freshly grated cheese for a quick dinner, or make it your own with the toppings of your choice. If you'd like to make this pizza dairy-free, simply substitute your favorite nut-based cheese for the mozzarella.

Serves: 4


Kosher or sea salt
1 cup cauliflower florets
1/2 cup KNOW Better Bread Mix

3 tablespoons extra-virgin olive oil
1/2 cup diced onion
1 tablespoon minced garlic
1 (28-ounce) can crushed tomatoes
1 teaspoon dried oregano
Kosher or sea salt and freshly ground black pepper

1/2 cup freshly grated mozzarella cheese
Fresh basil leaves
Extra-virgin olive oil


To make the crust: Heat oven to 275 degrees. Line a baking sheet with parchment paper.

Bring a medium saucepan of salted water to a boil over high heat. Add the cauliflower and boil until tender, 5 to 10 minutes. Drain well.

Transfer the drained cauliflower to a food processor and pulse until ground into fine crumbs. Transfer to a medium bowl and let cool completely. Stir in the bread mix until evenly combined. 

Pat the crust mixture into a 10 inch circle on the prepared baking sheet. Bake until browned on the first side, about 25 minutes. Carefully flip the crust, return to the oven, and continue to bake until browned on the second side, about 25 more minutes.

Meanwhile, make the sauce: In the now-empty saucepan, heat the oil over medium heat. Add the onion and garlic and cook, stirring frequently, until tender, 5 to 7 minutes. Stir in the tomatoes, bring to a rapid simmer, then remove from the heat. Stir in the oregano and season to taste with salt and pepper. 

To assemble and bake the pizza: When the crust is finished, increase the oven temperature to 325.

Spread about 3/4 cup of the sauce on the crust, leaving a 1/2-inch border around the edges. (Reserve any remaining sauce for another use.) Top with the cheese and basil leaves. Return to the oven and bake until the cheese has melted, 5 to 7 minutes.

Drizzle with the olive oil and serve.
